MEET THE STAFF OF THE RED HERRING

Holly Curia, Head Chef

Holly Monet Curia earned her Bachelor's degree in Global Studies from the University of Illinois, then spent many months traveling, working on and learning from organic farms before returning to Urbana to start a small urban farm cooperative, study yoga, grow flowers, and discover life.  "I aspire most in a life to works in unison nature, not at the expense of it.  That's why I'm drawn to pure foods, the "fruits of the earth", to the food that is grown locally, and to the food that is grown personally, with the consideration for the entirety of the planet and the seasons to come.  I'm an aspiring farmer myself and I want to share this experience with others, the enjoyment of discovering the food (and flowers) we can grow from the Earth that we live on."

Emmett Silver, Financial Manager

Emmett has more than a decade experience with vegetarian activism and restaurant work, including several years as a dishwasher, a degree in nutrition from Southern Illinois University Carbondale, two years with Holy Land Diner in Springfield, and interning as a dietitian in St. Louis.  Emmett brings a strong background and commitment to raw food vegan eating and lifestyle education. As a dietitian, he's often exploring up and coming food trends to look for new ways to invigorate the Red Herring's menu with nutritional eating and food consciousness.

Joanna Nordness, Line Cook

Joanna is from Urbana and grew up in the community. She has been vegetarian for 13 years. Joanna worked at the Red Herring ten years ago and felt really good about the mission of the restaurant. She loved the great people at the Herring and the delicious healthy vegan food. When Joanna moved back to Champaign-Urbana from the west coast, she decided that she wanted to work at the Red Herring again. Joanna lives in a cooperative house and also works at Common Ground Food Cooperative. She is passionate about vegetarianism and very happy to work at the Red Herring. “I love what the Red Herring does to provide local, healthy vegan food to the community!”

Josh Kissaw, Line Cook

Josh studied Landscape Design at Parkland College and brings years of restaurant experience to the Red Herring Vegetarian Restaurant. He's a practicing vegetarian with a deep interest in sustainable food culture. Josh is an Urbana-area native whose investment in CU's food and music scenes is at the forefront of his work.
